Tsuji Honten was founded in 1804 and has been at the cultural centre of the town of Katsuyama for over two centuries. 34-year-old Tsuji Soichiro is the 7th generation brewery owner. His elder sister, Tsuji Maiko, is the "toji" master brewer.
